SALAME DI COSCIA

SALAME DI COSCIA is a salami typical of the Brianza region. We don't waste an ounce of food, when we trim our legs of ham, and remove the bone, any cuts we take out of this precious meat we use in our SALAME DI COSCIA.

We only use the finest domestic pigs belonging to the chain of D.O.P. raw ham, made with pigs born bred and slaughtered in Italy.

The cuts that go into SALAME DI COSCIA are close to the bone and therefore perfect for salami because they are the driest and have almost no connective tissue and nerves. These factors mean that the salami dry better and is a delight to the senses. It is cured for at least 35 days.

Suitable for coeliacs, no intolerant to milk.

 

SALAME OSTERIA

SALAME OSTERIA is a salami in the traditional style of Brianza, commonly enjoyed in the region with polenta and a glass of fine red wine.

Similar to the Salame Di Coscia, this is a Salami of pure pork meat, in a natural casing and hand crafted in the traditional style of Brianza. The hints of garlic are well paired with a stronger wine.

Suitable for coeliacs and also intolerant to milk.

 

SALAME GENTILE OGGIONO

SALAME GENTILE OGGIONO is a classic salami made using only the finest domestic pigs belonging to the chain of D.O.P. raw ham: pigs born bred and slaughtered in Italy. We don't waste an ounce of food, when we trim our legs of ham, and remove the bone, any cuts we take out of this precious meat we use in our SALAME GENTILE OGGIONO.

 

These precious cuts are close to the bone and therefore perfect for salami because they are the driest and have almost no connective tissue and nerves. These factors mean that the salami dry better and is a delight to the senses.

 

 

 

MULETTA

The “Muletta” is a big salami produced in ancient times in Brianza region. Typically it was prepared  in December / January when the pig was killed and eaten later in August. It takes its name from the natural casing in which is bagged : the muletta is the pig’s cecum, a particular part of the large intestine. This casing is suitable for long aging and keeps the salami very soft also after a long time. The natural white/green mold, gives it an exciting burst of fragrance which kindles the desire in oneself for a salami sandwich!

The traits of the handcrafted salami is quickly clear when compared to an industrially made equivalent, even before you taste it; such is the gulf in quality.

We only use the finest domestic pigs belonging to the chain of D.O.P. raw ham, made with pigs born bred and slaughtered in Italy. The cuts that go into “LA MULETTA” are close to the bone and therefore perfect for salami because they are the driest and have almost no connective tissue and nerves. These factors mean that the salami dry better and has is a delight to the senses.

The result is a soft salami with a mature flavour, without the typical spice tones common among other salami.

It is cured for at least 60 days.

 

 

 

HAPPY 

Known as “Happy” our miniature salami is made from the same  Salame Di Coscia but with a different natural casing. The thinner lining and smaller size gives them more intense and vibrant flavours and aromas to their larger sibling.

They are just the right size for a snack, with a drink or for a picnic.

We call them “Happy” because they are cheerful and pleasant, when you eat them we hope they bring you joy. They have a pure crisp taste, without garlicky and spicy tones. They are cured for at least 10 days.

MIGNON

Mignon is a varity of the much loved “happy” Packed with the same great ingredients as Salame Di Coscia, Their small size and thinner casing gives them more intense and vibrant flavours and aromas to their larger sibling.

They are just the right size for a snack, with a drink or for a picnic.

They are sweet, eye-catching: just the right size and eat for a snack, a drink, a picnic, but always of high quality.

They taste sincere, clean, non-spicy garlicky
